Biscoff pie recipe

Happy National Pie Day! I've decided to mark this occasion with something that's a little different from your traditional pie but is insanely delicious! It's like a hybrid between a cheesecake and a pie! So, Biscoff, I absolutely love Biscoff, the biscuits and the spread, although my boyfriend isn't too keen on it (no idea why!), I think it's delicious and it's worth trying this pie out. The crunchy biscuit base perfectly complements the sweet, smooth, creamy filling, honestly it's totally delicious and super easy to make! 

Biscoff pie recipe

Ingredients - 

For the crust - 

About 24 Biscoff biscuits, crushed
2 tbsp caster sugar
70g unsalted butter, melted

For the filling - 

120ml double cream
115g cream cheese
130g Biscoff spread, crunchy or smooth both work well
50g caster sugar
1/2 tsp vanilla extract

Method - 

1. Preheat the oven to 160 degrees C. In a medium bowl, combine the crushed biscuits, sugar and melted butter until the mixture resembles wet sand. Push this into a 9" pie dish on the bottom and up the sides. 

2. Bake the crust in the oven for 9 minutes then take out and leave to cool completely. 

3. While the crust is cooling, in a medium bowl beat the double cream until stiff peaks form. 

4. In a separate bowl beat the cream cheese, Biscoff spread, sugar and vanilla together until smooth. Fold in the whipped cream. 

5. Pour the filling into the cooled crust and smooth over, refrigerate for a couple of hours until set.
