As you're reading this, I'll be in sunny Mexico! But I didn't want to miss out on posting another yummy recipe! I haven't made cookies in a while, I like experimenting with what I put in them, this time I went for double chocolate fudge! They're huge, crisp on the outside and soft in the middle! So good and so easy!
Makes 10-12 cookies
Ingredients -
75g butter
75g granulated sugar
75g light muscavado sugar
1 egg
155g self raising flour
20g cocoa powder
100g chocolate chips
50g fudge, chopped into chunks
Method -
1. Grease and line 2 baking sheets and preheat the oven to 180 degrees C/Gas Mark 4.
2. Cream the butter and sugars together until light and fluffy, then beat in the egg.
3. Fold in the flour, cocoa, chocolate chips and fudge. Place a tablespoon size of the mixture onto the baking sheets, leaving room for them to spread. Bake for 12-15 minutes.
4. Cool on baking sheets for a few minutes before transferring to a wire rack to cool fully.
Oh my god, that looks amazing. Time to break my diet haha!
