Recipe | Chocolate Whoopie Pies

This was my first attempt at whoopie pies and it's safe to say they're very...rustic. There was also a marshmallow filling explosion so they're stuffed to the brim! They might not be the prettiest whoopie pies anyones ever seen, but they taste so good! They're a proper treat! 

Ingredients - 

For the sponge - 

1 egg
150g caster sugar
125g plain yoghurt
25ml milk
1/4 tsp vanilla extract
75g unsalted butter, melted
200g plain flour
80g cocoa powder
1/4 tsp baking powder
3/4 tsp bicarbonate of soda

For the filling - 

170g unsalted butter, softened
280g icing sugar
220g vanilla marshmallow fluff

Method - 

1. In a large bowl, cream together the egg and sugar until pale and fluffy. Pour in the yoghurt, milk and vanilla and mix. Add in the melted butter and stir until combined. 

2. Add the flour, cocoa, baking powder and bicarbonate of soda into the mixture and and mix well. Place the batter in the fridge to cool and set for 20-30 minutes. 

3. Meanwhile preheat the oven to 180 degrees C/Gas Mark 3. Line 2 baking trays with parchment. 

4. Once the batter is cold, spoon it onto the tray in little mounds about a tablespoon in size. You should get about 12-16 mounds depending on how big you make them. Bake in the oven for 10-13 minutes, leave to cool on a wire rack. 

5. While the sponge is cooling, make the filling. Mix together butter and icing sugar until fully combined. Add the fluff and mix until light and fluffy. Place in the fridge for about 20 minutes to firm up slightly. 

6. To assemble the whoopie pies, take on of the sponges and spread about 1 tbsp of the mixture over the flat side, then sandwich the other flat side on top, repeat with the remaining sponges.
