Recipe | Spiced Rhubarb Cake

Since it's rhubarb season I really wanted to find something else to do with it apart from make a crumble! I decided on making a spiced rhubarb cake. It's super moist and has the most amazing spicy taste, it might be a little bit unseasonal, but it's still super yummy and really easy to make! 

Ingredients - 

140g butter, softened
300g self raising flour
2 tsp mixed spice
1 tsp ground ginger 
100g dark muscavado sugar
250g golden syrup
1 tsp bicarbonate of soda
2 eggs
300g rhubarb, cut into chunks
icing sugar for dusting

Method - 

1. Preheat the oven t 180 degrees C/Gas Mark 4. Grease and line a 20cm/8 inch square cake tin. 

2. In a large bowl cream the butter and sugar until light and fluffy. Beat in the eggs one at a time and the golden syrup. 

3. Add the flour, spices and bicarbonate of soda and mix until combined. Stir through the rhubarb. 

4. Pour mix into prepared tin and flatten down, bake for 50-60 minutes until cake feels firm to the touch and springs back. 

6. Cool in the tin for 10 minutes then turn out to cool fully on a wire rack. Slice into squares and dust with icing sugar.
