Recipe | Blueberry Banana Oat Muffins


Today I've got another picnic appropriate recipe! Although the weather here hasn't been particularly picnic appropriate! These blueberry banana oat muffins are also great to grab for breakfast, they're super yummy and really easy to make. You can make them on a Sunday and have breakfast sorted! 


Ingredients - 

300g self raising flour
1 tsp bicarbonate of soda
100g caster sugar
50g porridge oats
2 overripe bananas, mashed 
284ml buttermilk (or runny yoghurt)
5 tbsp vegetable oil
2 eggs
100g blueberries

Method - 

1. Preheat the oven to 180 degrees C/Gas Mark 4 and line a 12 hole muffin tin with paper cases. 

2. In a large bowl add the flour and bicarbonate of soda. Hold back one tablespoon of the sugar and one of the oats, then add the remainder into the flour along with the rest of the oats. 

3. In a separate bowl add the mashed banana, buttermilk, oil and eggs and mix until combined. 

4. Add the wet mixture to the dry mixture and combine, stir in the blueberries. 

5. Divide evenly into the cases, they will be quite full, then sprinkle over the remaining oats and sugar. Bake for 18-20 minutes until risen and golden. Cool in the tin for 5 minutes before turning out onto a wire rack to cool fully.
