Recipe | Raisin Chocolate Chunk Oatmeal Cookies


As I look out of the window the sun is shining and there's not a cloud in the sky! Can you believe it?! After what seems like a decade of winter some signs of Summer are finally on their way! I thought I'd share a recipe today that is perfect for knocking up and taking in a picnic basket! I've been writing down places for me and Steven to go on picnics when the weather is nice, so I'm sure I'll have more picnic appropriate bakes in the future!


I haven't made cookies in ages, I was feeling a little uninspired so I thought I'd try something I haven't done before and went for Raisin Chocolate Chunk Oatmeal Cookies. They're lovely and crisp on the outside and soft in the middle. Also I'm so obsessed with this huge plate I got for my birthday, it's melamine so also perfect for picnics, it's from TK Maxx. 


Ingredients - 

75g raisins
75g milk chocolate, chopped
150ml vegetable oil
200g caster sugar
1 egg
1 tsp ground cinnamon
1 tsp vanilla extract
140g plain flour
1/4 tsp bicarbonate of soda
300g oats

Method - 

1. Preheat the oven to 180 degrees C/gas mark 4 and line 2 baking trays with parchment. Pour 50ml of boiling water over the raisins and leave to soak for 10 minutes until plump. Drain and reserve the liquid. 

2. Meanwhile in a large bowl, mix together the oil and sugar. Gradually beat in the egg along with the reserved water from the raisins, the cinnamon and vanilla. Add in the flour, bicarbonate of soda and a pinch of salt into the bowl and mix. Add in the oats, chocolate and raisins and combine. 

3. Drop heaped tablespoons of the dough onto the prepared trays, bake for 12-15 minutes until golden. Leave to cool on the trays for 10 minutes before transferring onto a wire rack to cool completely.
