Recipe | Golden Citrus Drizzle Cake


With the weather getting better I decided today to share a recipe for a Gold Citrus Drizzle Cake, as this would be perfect to take for a picnic! Funny story, this cake is supposed to have orange, lemon and lime in, although in my haste of finding "oranges" in the reduced section at Asda, I later realised they were actually grapefruits...so there you go, mine is only lemon and lime! This cake is super moist, sharp and sweet! 

Ingredients - 

For the cake - 

175g unsalted butter, softened
175g caster sugar
200g self raising flour
1 tsp baking powder
2 large eggs
4 tbsp milk
zest of 1 lemon, 1 lime and 1/2 an orange (or mandarin etc)

For the glaze - 

85g caster sugar
juice of 1 lime, 1 lemon and 1/2 orange (mandarin etc)

Method - 

1. Preheat the oven to 180 degrees C/Gas Mark 4. Grease and line a 30x23cm baking tin. 

2. In a large bowl, cream together the butter and sugar, add in the eggs, mixing after each addition. 

3. Add in the flour and baking powder and mix until combined, add in the zest and milk and stir until thoroughly combined. 

4. Pour mixture into prepared tin and spread evenly with a spatula. Bake in the oven for 25-30 minutes until golden, risen and springy to the touch. 

5. Leave cake to cool in the tin for 10 minutes before turning out onto a wire rack. Make the glaze by mixing the sugar and juices and spoon over the cake while still warm. 

6. Once cool cut into slices and enjoy!
