Recipe | Gingerbread Cupcakes with Toffee Frosting

I love baking all year round, but something about festive baking gets me even more excited! I absolutely love all the spices and festive flavours, this recipe is no exception! I decided on a gingerbread cupcake recipe with toffee frosting, mainly because I picked up some super cute gingerbread men sprinkles from TK Maxx and couldn't wait to use them! This recipe is super easy, so so delicious, spicy and sweet, just everything you want from a Christmas bake! 

Makes 12 Cupcakes 

Ingredients - 

For the sponge - 

115g unsalted butter, softened to room temperature
100g packed light or dark brown sugar
1 egg
120ml milk
156g black treacle
1 teaspoon vanilla extract
167g plain flour
1/2 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1/4 teaspoon ground mixed spice

For the frosting - 

200g unsalted butter, at room temperature
50g soft brown sugar
3 tbsp milk
200g icing sugar
pinch ground cinnamon

Method -

1. Preheat oven to 177°C. Line 12-count muffin tin with cupcake liners. Set aside.

2. In a large bowl beat the butter and brown sugar together until creamy. Beat in the egg until combined, scraping down the sides and bottom of the bowl as needed. Beat in the milk, black treacle, and vanilla until combined. 

3. In a medium bowl, mix the flour, baking powder, bicarbonate of soda, salt, cinnamon, ginger, nutmeg, and mixed spice together until combined. Slowly pour the dry ingredients into the wet ingredients. Mix until just combined. 

4. Fill cupcake liners 2/3 of the way full. Bake for 19-21 minutes or until a toothpick inserted in the center comes out mostly clean. Allow to cool completely before frosting.

5. For the frosting, place 50 grams of the butter in a pan with the brown sugar and cook over a low heat until melted. Add 2 tablespoons of the milk and stir to form a thick glossy toffee sauce. Leave to one side to cool to room temperature.

7. In a large mixing bowl beat the butter until smooth, then start to sift in the icing sugar, stirring regularly. Add the toffee sauce and stir until thoroughly incorporated. Add a splash more of milk if the mixture seems too thick, the frosting should be light and creamy.

8. Put the frosting in a piping bag and pipe onto the cupcakes. Sprinkle with decorations!
