Recipe | Salted Pretzel Choc Chip Cookies

Hi guys, today I'm back with another cookie recipe! This time I went for Salted Pretzel Chocolate Chip. I saw this recipe in a book all about cookies I picked up from TK Maxx called Chocolate Chip Cookies : Dozens of Recipes for Reinterpreted Flavours and I had to give it a go! These are gorgeously soft chewy cookies, my absolute fave!

Makes 20 Cookies

Ingredients -

280g plain flour
1/2 baking powder
1/2 salt
115g unsalted butter
290g light brown sugar
1 egg
60ml milk
1/2 tsp vanilla extract
115g chocolate chips
150g salted pretzels

Method -

1. Preheat the oven to 180 degrees C/Gas Mark 4. Line 2 baking sheets with greaseproof paper.

2. Mix together flour, baking powder and salt in a medium bowl.

3. In a separate bowl cream together butter and sugar, add in the egg and mix. Add the milk and vanilla, mix until completely combined.

4. Add the chocolate chips to the mix and stir until evenly distributed. Bash up the pretzels so they are in small pieces, add to the mix and again stir until evenly distributed.

5. Taking about a tablespoon of the mix, scoop out onto the baking tray, space them about 5cm apart as they will spread.

6. Bake for 12-15 minutes, rotating the tray after half the time. Leave to cool on a wire rack.
