Recipe | Toffee Apple Upside-down Cake

For Father's Day my Dad asked me to make him a toffee apple cake. I thought I would share the recipe with you because it was really tasty and was relatively easy to make. I used John Whaite's recipe from The Great British Bake Off with a couple of my own tweaks. 

Toffee Apple Upside-Down Cake 

Makes 12 squares

Ingredients - 
For the toffee apple topping - 
200g Caster Sugar
3 Large Granny Smith Apples, peeled, cored and cut into wedges
1 Large Orange, zest only
Butter, for greasing
For the sponge - 
225g Salted Butter, softened
225g Caster Sugar
225g Self Raising Flour
1/2 tsp Bicarbonate of Soda
4 Eggs
60ml Whole Milk
1/2 tsp Vanilla Extract

Method - 

1. Grease a 23cm rectangle baking tin with butter and line with greaseproof paper. Preheat oven to 180C/Gas Mark 4.

2. For the topping, put a pan over a high heat. Add the sugar and three tablespoons of water and cook until sugar melts and turns an amber colour, do not stir at any point. Remove from heat and carefully pour the toffee into the lined baking tin, taking care to cover the base completely. Place the apple wedges into rows on the toffee. Sprinkle with a third of the orange zest. 

3. For the sponge, beat the butter, the remaining orange zest and sugar until pale and fluffy. Sift together flour and bicarbonate of soda and add to the the butter mixture one tablespoon at a time along with one egg. Mix well after every addition until all of the mixtures have been combined. Stir in the milk and a few drops of vanilla. 

4. Pour sponge mixture on top of toffee and apples in the tin, making sure everything is coated. Bake in the oven for 40-50 minutes. Place a cooling rack over the tin and flip the cake out. Remove from tin and leave to cool completely. Once cool, cut the cake into squares.
