This recipe is one that I tried out from my new Primrose Bakery Book. I combined the Banana Loaf recipe with the Sour Cream Chocolate Icing recipe and they worked so well together! Banana cakes are one of my favourites and pairing that with chocolate is a match made in heaven!
Makes 8-10 Slices
Ingredients -
For the sponge -
125g Unsalted Butter
250g Caster Sugar
2 Large Eggs
1 tsp Vanilla Extract
250g Plain Flour
2 tsp Baking Powder
4 Bananas, Mashed with a Fork
175g Dark Chocolate Chips
For the icing -
350g Dark Chocolate
400ml Sour Cream
Banana Chips for Decorating
Method -
1. Preheat the oven to 180 degrees C/Gas Mark 4. Grease and line a 900g loaf tin.
2. Cream the butter and sugar in a bowl. Add the eggs one at a time, mixing well after each addition. Add the vanilla extract and beat again. Sift the flour and baking powder into a bowl, then gradually add into the butter mix, beat again until well combined. Beat in the mashed bananas and finally stir in the chocolate chips.
3. Pour the mixture into the loaf tin and level out with a spatula. Bake in the oven for 50 minutes, until a skewer inserted in the centre of the cake comes out clean. Leave the cake in the tin to cool.
4. While allowing the cake to cool, make the icing. Melt the chocolate together with the sour cream in the microwave. Once the chocolate is melted you should have a smooth icing. Once the cake is cool, remove from tin and coat in the icing. Decorate the top with banana chips.
Banana cake is one of my favourite cakes, so this is a nice alternative and treat, I definitely need to get baking this! :)
