Recipe | Easy Honey Cake

The recipe is from an amazing cake book my mam bought from the charity shop called The Best-Ever Book of Cakes. It's absolutely massive with 165 gorgeous recipes and she only paid £1 for it! This is a really easy recipe but makes a lovely traybake cake with massive flavour! 

Easy Honey Cake 

Makes 16 Squares


175g Butter, plus extra for greasing
175g Clear Honey
115g Soft Light Brown Sugar
2 Eggs
1-2 tbsp milk 
225g Self Raising Flour


1. Grease and line a 23cm square tin with baking parchment. 

2. In a pan, gently heat the butter, honey and sugar, stirring until the sugar has dissolved and the butter has melted. Set aside to cool slightly.

3. Preheat the oven to 180 degrees C/Gas Mark 4.

4. In two batches, beat the eggs and milk into the cooled mixture in the pan, using a wooden spoon. 

5. Sift the flour over the top, stir and beat well. The batter should have a smooth pouring consistency. 

6. Pour the mixture into the tin. Bake for 30 minutes, or until well risen, golden brown and firm to the touch.

7. Cool for 20 minutes, then turn on to a wire rack to cool. Remove the paper lining and cut into squares.
